Greek Chicken Traybake Recipe


  1. Pre-heat oven to 200 °C/180 °C fan/Gas mark 6
  2. First, prepare the vegetables. Slice the red onion and pepper into thin strips.
  3. Chop the courgette into small chunks, mince the garlic and quarter the tomatoes.
  4. Add the chicken breast to an oven dish.
  5. Layer the onion, pepper, courgette and tomatoes around the chicken breast and spread them out evenly.
  6. Sprinkle over the garlic, basil, salt, pepper, oregano, smoked paprika and olives.
  7. Add the slices of lemon onto the chicken breast.
  8. Spray with zero-calorie cooking spray.
  9. Cover the tray with foil and bake in the oven for 15 minutes.
  10. After 15 minutes, remove the foil and cook for a further 15 minutes uncovered.
  11. Check the chicken breasts are cooked through before serving.
