When you’re in a hurry and want a speedy supper, this low-calorie recipe is perfect. Just wrap everything up in a paper or foil parcels and leave in the oven for 30 minutes. If you’re using foil, it can cook on the barbecue, too.

Method:
- Preheat the oven to 200°C, gas mark 6.
- Place the chicken in a bowl with the teriyaki or soy sauce and ginger. Turn the chicken in the mixture.
- Take 2 large squares of baking parchment paper or kitchen foil and divide the prepared vegetables between them. Put the chicken on top and drizzle with the teriyaki or soy sauce left in the bowl. Season with black pepper, then fold the parchment or foil over the top into middle to make 2 parcels. Seal the edges by twisting them together, and place on a baking sheet.
- Bake in the oven for 30 minutes, or until the chicken is cooked right through and the vegetables are tender. Serve immediately.
