This cheap and cheerful one-pot meal will not only warm you up on a cold winter’s evening but will also leave you feeling pleasantly full. The spices add heat and flavour, but you can substitute sweet paprika if it’s too smoky for you.
Spray a flameproof casserole dish lightly with spray oil and place over a medium heat. Add the sausages – you can leave them whole or cut them into chunks – and cook, turning a few times, for 5 minutes, or until browned all over. Remove from the casserole dish and set aside.
Add the onions, celery and garlic to the casserole and cook for 6–8 minutes, or until tender. Stir in the paprika and chilli and cook for 1 minute. Add the butter beans, tomatoes, hot stock and sausages. Season with salt and pepper.
Cover the pan and reduce the heat to low. Simmer for 10–15 minutes, then uncover and cook for another 5 minutes until the liquid reduces and thickens. Sprinkle with parsley and serve.
Step it up…
To enjoy this dinner on Steps 3 and 4, use the drained butterbeans from a 400g can, and serve with 300g mashed potatoes and 150g boiled or steamed broccoli. This will add 1g fat and 32g carbs per serving.
Tip: If you’re using frozen Quorn sausages, defrost them first.
