Here’s our take on a classic mince and potato hash, using our yummy Cottage Pie MRP! Topped with an egg it’s extra indulgent and the side of cherry tomatoes makes this colourful dish a firm favourite.
This super tasty recipe is perfect for those on Step 2 or above.
Cut potatoes in half (cut larger ones into thirds), lay them in a shallow baking tray.
Spray 3-4 times with olive oil and give the pan a few shakes to spread the olive oil evenly on the pan and potatoes.
Cook for 20 minutes.
Add the chopped cherry tomatoes to the tray with the potatoes and cook for a further 10 minutes, or until desired tenderness.
Steam beans in the microwave or boil in water (as per the instruction on the packet).
Poach the egg in boiling water for about 3 minutes (depending upon how you want the yolk).
Make up your Cottage Pie following the instructions on the sachet.
Place the Cottage Pie in middle of a plate, dress with potatoes and beans, place the poached egg on top and cherry tomatoes around the side of the plate.
